The production of dried jelly slices has a history of more than 500 years and dates back to the early years of Ming Dynasty. Buckwheat is widely cultivated in northern Shaanxi, and many kinds of food are made of buckwheat.
Legend has it that in the middle of the Ming Dynasty, an old woman made jellies and placed the cooked jelly slices on the stone table in the courtyard, forgot to pick up in time until they were as dry as a stone. She thought it a shame to throw away the food, so she soaked them in warm water until they became soft, and then mixed them with seasonings to eat. Out of her expectations, the food tasted tougher and chewier, and much better. So she especially made some jellies, cut into small strips, and placed under the sun until they became dry. This is the dried jelly stripes today.
As the main raw materials of dried jelly stripes are buckwheat flour, mung bean powder and other grains, they have the effect of reducing heat and blood lipid, and preventing diabetes. And because the dried jelly stripes are easy to store, have long shelf life, are easy to carry and eat, they have become a characteristic local specialty of Fuxian special foods and showed their appearances in Shaanxi Province and elsewhere in the country, and have become a special gift for guests and relatives.
