The continuation of this custom enables the existence and development of “Wuqi choppedbuckwheat noodles”. Buckwheat, the main raw material of chopped buckwheat, is one of the majorgrain crops in ancient China. As knownto the public,the earliest materialobject of buckwheat was unearthed in the No.4 Han Tomb in Yangjiawan, Xianyang, Shaanxi Province, more than 2,000 years ago. In addition, in MaquanStreet in XianyangCity, Shaanxi Province, and Mozuizi in WuweiCity, Gansu Province, material objects in the early and late Han dynastieswere also unearthed. In Tang Dynasty, buckwheat planting was widely popularized, and the cultivation technology of buckwheat was described for the first time in ZaShuo(Miscellaneous remarks), “For planting buckwheat,plough in May, after 35 days, when the grass rotted and planted, ploughforthree times. It is planted within 10 days before and after the beginning of autumn. If you plow three times, it means you sowseeds three times.
