Nanniwan mushroom noodles originated in the period of the Great Production Campaign of the 359 Brigade. After years of development, now there have been multiple flavors of the noodles in Yan’an, such as the “Authentic Mushroom Noodles”, “Secret Mushroom Noodles”, “Mushroom Noodles in Clear Soup”, and so on. The traditional Nanniwan mushroom noodles are famous in northern Shaanxi for its “fresh meat and mushrooms, thick soup, and chewy noodles”. Meat balls, fungus and mushroom soaked in thick soup make the taste mellow and endless. Noodles are highlighted on account of the characteristics of northern Shaanxi pasta of being “chewy” and “smooth”, making people appetizing.
